Story
At just 21 years old, Silvia Ordoñez is indeed one of the youngest producers to appear on our menu. This microlot of the prized single varietal Pink Bourbon—which we’ve lovingly named after her—is not only her first ever international individual sale ever, we’re overjoyed to have purchased the entire harvest!
Here’s the amazing thing about Pink Bourbon. It’s a genetic descendant of Ethiopia’s native “Landrace” varietal, so it’s the best of both worlds: an elegant, sought-after flavor profile grown to perfection in the idyllic natural conditions of Colombia’s high-altitude forests. Having been a World Barista Championship coffee twice over, it’s a taste to behold, surely!
Silvia planted this lot of 1,500 trees on the small parcel of land that her father, life-long coffee producer Silvio Ordoñez, gave to her out of his 3-hectare farm in the mountains of Huila. The cherries were washed and double fermented over 90 hours and then dried on top of their roof to bring out the coffee’s distinctive character.
In addition to her father’s mentorship—and living up to his teaching that “one has to achieve things by their own merit”—Silvia’s consistent study at Monkaaba’s weekly cupping sessions in San Agustin helped her hone her craft immensely. There, she trained to identify her own coffee in blind taste tests, and deepened her knowledge of harvesting, processing, and defect analysis, leading to an unparalleled refinement of her trade at such a young age. The sky is certainly the limit for this rising star!
In the cup, we taste ripe strawberry, peach tea, and brown sugar.
